Noodles embody versatility in its many flavors and accompaniments and is a lifesaver when you are out of time and ingredients. The availability of a variety of store bought sauces makes life easier. A simple dish of chili garlic chowmein and chicken with black bean sauce can flavor your palette and fill your belly anytime of any day.
Prepare your store bought noodles according to the instructions on the pack and keep it aside. Ensure it is cooked Al Dente to have a non sticky experience. I find this part a deal breaker many times and extra gluten tends to make the noodles very bland. Go chop chop on one medium sized onion, spring onions and one capsicum. Drizzle oil onto a wok and allow it to reach a decent temperature. Pop in your veggies, saute till they get some color. The aroma and a tasting should let you know when they are done. Put in the protein at this stage and allow it to cook through. Season with salt and pepper. Now add the black bean sauce and allow it to coat the ingredients.
In a separate wok, drizzle some oil. Once the wok gets hot, add generous amounts of garlic and chilli flakes. Scramble in a couple of eggs. Few spoonfuls of tomato paste followed by your cooked noodles finishes a job well done. Enjoy while its still hot.
